Ingredients
- 7-8 Tomatoes
- Maziwa mala (sour milk)
- Mixed pilau masala with cardamom & cumin seeds
- Marinated Chicken for 30mins
- Garlic and ginger
- Cinnamon sticks
- Onions
- 2 cups of rice
Method for Making Biryani Sauce
- Dice the tomatoes and onions into small pieces to prepare them for blending. If you have no blender you could grate or cut them into tiny little pieces.
- Add maziwa mala (sour milk) to the blender plus the diced tomatoes and onions to make it easier to blend. This makes the Biryani sauce very thick which is better than adding water.
- Pour oil into a pan and fry 1 diced onion until golden brown.
- Add the mixer of garlic and ginger blended about 1-3 tbs, add some salt and the mixer of mixed pilau masala with cardamom and cumin mixer.
- Add a bit of vegetable oil to a cooking pot and when the oil is hot enough add the blended sauce
- Add marinated chicken into the sauce and mix well then leave to cook.
Method for Boiling the Rice
- Add boiled water and a bit of salt for cooking rice.Wait for the water to boil.
- Add the cinnamon sticks to the water before it comes to a boil.
- Add the rice after cleaning it.
- When the rice is done and the water has dried out add a bit of oil to give it a shine.
- Add food colour, it can be a blend of two colours or according to your preference.
